More and more people are interested in eating less meat, or even no meat, in an effort to improve their health and the health of Mother Earth. This big, beautiful cookbook will become a go-to resource for anyone wanting to make the move to a lower-meat diet.
Great introductory sections lay out what is needed in one’s pantry, what substitutions work, and the way to use and handle plant-based meat. The book features 400 recipes broken down into eleven sections, including Brunch; Sandwiches, Burgers, Pizza, and More; Vegetable Dishes Big and Small; Electric Pressure-Cooker and Slow-Cooker Dishes; and Plant-Powered Desserts. Each recipe begins with a paragraph detailing “Why This Recipe Works” with an explanation of what is used and why. Many recipes are marked as “Fast,” and these can all be made in 45 minutes or less. An index in the back specifies which recipes are gluten-free, and another index gives more complete nutritional information.
Lots of mouth-watering photos and instructional photos populate the book. Don’t miss the Roasted Artichokes with Lemon and Basil or the Pumpkin Cashew Cheesecake. Yum! All the recipes are vegan but are flexible and leave room for additions and changes.
