The Red Boat Fish Sauce Cookbook: Beloved Recipes from the Family Behind the Purest Fish Sauce
Fish sauce, a fermented anchovy sauce, is a staple in Vietnamese cuisine. Cuong Pham, the founder of Red Boat Fish Sauce, started the business so his mom could enjoy the same authentic fish sauce that he and her had used while living in Vietnam. This cookbook is chock full of traditional Vietnamese cuisine utilizing fish sauce as well as some not so traditional recipes that use fish sauce.
I decided to start with a traditional recipe: Bún Riêu (crab noodle soup). This noodle soup is a true labor of love, but it is so worth the effort. My family loves noodle soup, and Bún Riêu is no exception. The crab meat with the tomato soup is tantalizingly delicious! One of the non-traditional recipes I decided to try is the burgers with Red Boat Dressing. The burger dressing consisted of oil, mayo, ketchup, scallions, and fish sauce. I couldn’t really taste the fish sauce much, but the dressing was flavorful and will spice up any bland burger.
I love the quality of Red Boat Fish Sauce, and I love the story behind it even more. My only wish is that there were more photos to accompany each recipe (this applies to all cookbooks actually).
