If you’re like most people, your cupboard probably contains a jar of peanut butter, which gets pulled out to make sandwiches for the kids or the occasional batch of peanut butter cookies. But there are so many more possibilities! With Robin Robertson’s The Nut Butter Cookbook, you can take your peanut butter (or almond butter, or macadamia butter, or sunflower seed butter…) to a whole new level. The book starts out with basic instructions for making your own nut butter (often cheaper and healthier than store-bought), as well as other nut-based items like Cashew Sour Cream or Nutty Parmesan. And then come the rest of the recipes. There are soups (such as Cheesy Almond Broccoli Soup), Starters (Spinach Artichoke Almond Dip), Salads, Side Dishes, Main Dishes (Pasta with Cauliflower Cashew Alfredo), Sandwiches, Breakfast & Beyond, Desserts (Pineapple Coconut Cheesecake), and other Sweet Treats (Cranberry Peanut Butter Fudge). No pictures, but the descriptions and ingredient lists will leave your mouth watering even so. Every single recipe in this book is vegan, most can be made with little or no added oil, and many of them can easily be gluten free or soy free, making this book accessible to everyone. Pick this cookbook up, and find yourself branching out into new and exciting recipes!
