The entire bread-making process can be quite time-consuming, relegating the creation of homemade artisan loaves to exceedingly rare open weekends. But with the method introduced in this cookbook, you can have those artisan loaves anytime, with only, truly, about five minutes of work. Store a very wet dough in the fridge; every day, bake just what you want, leaving the rest to develop in flavor over time. No kneading, minimal shaping and resting, and suddenly you have fresh bread warm from the oven, ready for dinner. I cannot overemphasize how easy this is.

The basic master recipe results in a very pretty, tasty loaf with a crackling crust and an open crumb. Move beyond loaves to make pizzas, pita, or rolls. The basic enriched dough recipe makes cinnamon rolls, doughnuts, raspberry braids, and more. The recipe for sticky caramel rolls had too much caramel sauce, but the rolls themselves (made with this basic enriched dough) were meltingly tender, with a soft, pillowy crumb––perfect. You will be much more eager to make more complicated bakes like these when the dough is already ready! I will be relying on this book for quick, easy bakes I can offer my family every day.
